New Recipe

Seth loves mushrooms. Since I am got big on the fungi unless it is deeply fried and unhealthy, I don't cook with them. But I recently found a recipe for stuffed mushrooms that looked pretty good. It was super easy to make and Seth said they tasted great. Sooo, I thought I would share with any other mushroom lovers out there! Enjoy!

The Ultimate Stuffed Mushroom

What You Need:

20 Fresh Mushrooms

3 Tbsp Butter

2 Tbsp Finely Chopped Onions

2 Tbsp Finely Chopped Red Peppers

1/2 Cup Crushed Ritz Crackers

2 Tbsp Grated Parmesan Cheese

1/2 tsp Italian Seasoning

*Preheat oven to 400 degrees.

*Remove stems from mushrooms.

*Finely chop enough stems to measure 1/2 Cup.

*Melt butter in large skillet on medium heat.

*Add stems, onions, and peppers.

*Once tender, add cracker crumbs, cheese, and seasoning.

*Spoon into mushroom caps.

*Place on baking sheet.

*Bake for 15 minutes or until heated through.

EAT UP!!!

One Year Ago Today...

Seth and I were blissfully unaware of the outside world as we ate dinner with Cinderella, flew through the beautiful blue skies with Dumbo, and hung out with Chip and Dale. Ahhh...good days! One year ago today was the beginning of our wonderful Disney World Honeymoon. One year ago yesterday, Seth and I sat nervously in separate church classrooms as we awaited our "I Do's." One year ago yesterday was our Wedding Day!

Wow, how time flies! We have had one very special year, packed with more happiness and excitement than we could have hoped for!

I will skip all the lovey dovey stuff...knowing that Seth would take one look at it and say, "Seriously? You had to put that on there?" So, instead, I will just say that I am very thankful for the man that I married. And I am looking forward to the next year!

Don't have any unique stories from this part of the trip. We took the ferry over to the island, hung out, took some great pictures, decided NOT to stand in the very long line to go into the statue, bought Mom a souvenier Christmas ornament and took the ferry out. It was a beautiful day to be sightseeing. The weather was perfect the entire time we were there. Anywho...check out some of our pictures from the day...

Top of the Rock

I know what you're thinking....how many more NY posts can this girl do?! Well, it's just this post and one more...I promise! :)

Each time I've been to NY before, we always went to the Empire State Building to get our view of the city. But this time we tried something different. We had heard that the views from the top of Rockefeller Center were much better. So, one morning we took of to the Top of the Rock.

The rumors were so true! The views from this building were much prettier! You get a perfect, unobstructed view of Central Park and of the Empire State Building. What makes it even better was that it wasn't crowded at all! There may have been a dozen other people there while we were. It was wonderful!

I can't help but wonder if Seth was thinking...."hmmm, what would happen if I dropped a penny from up here??"

TKTS

One of my favorite things about New York is the TKTS booth. You can purchase Broadway tickets on the day of the performance for HALF PRICE at these booths! So, Seth and I got in line with a few hundred other people one day in hopes of getting some good tickets. We decided that we wanted to go see Shrek The Musical. We had heard that it was a funny show and figured we would both enjoy it. Sooo, when we finally took our turn at the ticket window, they amazingly still had ONE pair of Shrek tickets together! And they were gonna be ours! For half price!

The show was outstanding! All of the music was new and very entertaining. The actors were spectacular and had tremendous voices! We absolutely loved it! Here are a few pictures...that I took illegally...

Citi Field

We were also able to see the Mets new stadium while we were in NYC. It was also a beautiful ballpark. We actually liked the design of this stadium a little better. It had a mini ballfield set up for kids to play in. It also had various areas with picnic tables set up so you could sit down and eat your food.

So, what was the highlight of this ballpark?? Why meeting Mr. Met, of course! :)

Yankee Stadium

The main reason we made this trip was for baseball...I mean, come on, how else would I get Seth to agree to a NY trip? :) The first game we went to was at the new Yankee Stadium. It was very nice! The history associated with the Yankees made the stadium even more special.

We got there 2 hours early hoping to catch some batting practice, but that was a no go. :( At least that gave us plenty of time to explore the stadium.

Seth was like a little boy, just soaking it all in.

The best part of the game, to me at least, was the food! :) It was amazing how many choices they had...not just your typical hot dogs and pretzels. Everything was cooked fresh and delicious! Especially my Moe's Nachos!

Our Adventures in the Big City

Seth and I returned last week from our summer vacation /anniversary trip to New York City. So, be prepared....I am about to overwhelm you with pictures!! We had a very good time, but we are glad to be home. We did all of the typical tourist stuff while we were there...

...enjoyed the sights in Times Square...

...watched a Fireworks Extravaganza with 2 million of our closest friends (waaay too many people for our liking)...

...ate a hot dog from a street vendor and lived to tell about it...



...chilled with my new friend Matt (he doesn't talk much)...

...tested out some Wii games...

...managed to get on the correct train every time...

...got a picture with a Toy Soldier...

...and with Batman...

...walked very quickly past Tiffany & Co. before I could talk Seth into going in...

...drooled in front of the wall of M&Ms...

...and found statues of ourselves (bet you can't guess which one is me and which is Seth).

Of course, this wasn't all we did....more posts to come on the other things!!!
